This Saturday, 13th May, marks World Cocktail Day! Now that’s a day we can certainly get behind! How about you?

Around since the 1800s, cocktails were initially inspired by British punches containing spirits, fruit juices and spices. The first reference to cocktails appears to have originated in a spoof piece in an American newspaper where someone nursing a hangover at 11am “drank a glass of cocktail – excellent for the head….”

If you prefer to keep a clear head, why not swap your cocktail for this delicious mocktail? Packed with cool and refreshing summer berries, mint and cucumber, it’s super easy to make and oh-so-tasty!

Summer Cup Mocktail

Ingredients:

  • 1 cm thick slice of cucumber
  • 1 sprig of mint
  • A few frozen red berries
  • 120ml clear, sparking lemonade
  • IceMore frozen berries, chopped fruits, cucumber slices, mint and citrus to garnish

Method:

  • Chop a 1cm thick slice of cucumber and a sprig of mint into small pieces.
  • Bring 200ml water to the boil in a small pan and add the mint and cucumber. Turn off the heat and leave for 2 mins.
  • Add a small handful of frozen red berries, let them defrost for a minute, then crush them lightly with the back of a spoon.
  • Strain the mixture. This can be kept in the fridge for up to 24 hours and will make four drinks.
  • Pour 40ml of your strained mixture into a tall glass.
  • Add a handful of ice and top up with 120ml lemonade.
  •  Garnish with more berries, mint, cucumber or citrus fruits of your choice.
